Fine brown broken Bulgur or Burghul is whole wheat that is parboiled, crushed, dried and sifted to fine grain. It is a nutritious, versatile wheat with a richer-nutty flavour. Fine brown bulgur is a common ingredient in Middle Eastern cuisines and is used in Tabbouleh salad, kibbeh, kebabs, Falafel, baked goods and in any recipe as a substitute for rice. Easy to cook and with a mild, nutty flavour, bulgur is a versatile ingredient that can be used in a wide range of dishes. How to cook Bulgur: Put the bulgur in a large mixing bowl. Pour the boiling water over it. The water should completely cover the bulgur by about 1/4 inch (add a bit more boiling water if needed). Cover the bowl with a lid or plastic wrap. Set it aside for about 20 to 25 minutes to allow the bulgur to soften.
